Ingredients: - 1 can of sardines in oil, drained - 1 can of chickpeas, drained and rinsed - 1 onion, chopped - 2 cloves of garlic, minced - 1 teaspoon cumin - 1 teaspoon smoked paprika - 1/2 teaspoon turmeric - 1/4 cup chopped parsley - Salt and pepper to taste - Olive oil for cooking - Lemon wedges for serving (optional) Instructions: 1. In a large skillet, heat a tablespoon of olive oil over medium heat. 2. Add the chopped onion and cook until soft, about 5 minutes. 3. Add the minced garlic and cook for another minute. 4. Add the cumin, smoked paprika, and turmeric to the skillet and stir until fragrant, about 1 minute. 5. Add the drained chickpeas to the skillet and stir until well coated with the spices. Cook for about 3-5 minutes. 6. Add the drained sardines to the skillet and break them apart with a spoon. Cook for another 3-5 minutes, stirring occasionally. 7. Remove the skillet from the heat and stir in the chopped parsley. Season with salt and pepper to taste. 8. Serve the sardine and chickpea mixture hot with a squeeze of lemon juice, if desired.
